Hokey Pokey is something typically in New Zealand.
Almost a tradition, the children, it is taught when they are small, how it is done.
Apparently, Hokey Pokey Ice is said to be the best in the world.
If that’s true, I’ll definitely find out on my trip.
Today I was allowed to be there when Helen did it.

1/2 cup of sugar
1/4 cup golden syrup
2 teaspoons of baking powder
First you put the sugar with the syrup in a saucepan.
Let it boil for 4 minutes, stirring again and again, so it does not burn.
Now you take the pot from the stove, slowly add the baking powder.
Attention, now grows a small mountain landscape.
Only when it stops growing, give it in a greased baking pan to cool.
After it has cooled down, you can break it into small pieces.
These are now eaten either pure or added to the ice.
